In this Maison Gilliard workshop in Sion, participants taste the base wines of Dôle, the best-known Valais blend, under expert guidance and learn about the role each component plays in balance, structure and aroma. They then experiment with blending ratios until their personal version of the Dôle des Monts is ready, no prior knowledge required. The format takes place in the tasting rooms in the wine cellar, lasts around 1.5 to 2 hours and won the Discovery & Innovation award at the Best of Wine Tourism 2026.
