At the Caveau de la Louve on Place de la Louve in Lausanne, three mature Chasselas from the Domaines de la Ville de Lausanne take centre stage, each paired with a long-aged Gruyère from Fromagerie Macheret. Vintages aged 12, 24 and 36 years are tasted, each with a cheese matured for 12, 24 and 36 months respectively, served with the salted flûtes from Chez Séverine et Luca. The tasting is part of the Lausanne à Table programme during the BÔ NOËL Christmas market.
